- slices cooked bacon, halved crosswise

Preparation
- Step 1
- Mayonnaise In a small bowl, combine all of the ingredients (see note). Set aside.
- Step 2
- Burgers Preheat the grill, setting the burners to high. Oil the grate.
- Step 3
- In a bowl, combine the meat, shallot, steak spice and mustard. With your hands, shape the mixture into 4 patties. Place on a plate. Lightly oil the patties.
- Step 4
- Grill the patties for 4 minutes on each side. Top each patty with one slice of cheese and continue to cook for 1 minute or until the meat is cooked through and the cheese has melted. Grill the inside of the buns.
- Step 5
- Spread the mayonnaise sauce over the inside of the grilled buns. Top the bun bottoms with the pork patties. Garnish with the bacon, tomato, pickles and lettuce. Close with the bun tops. Serve with chips and green salad, if desired.
Variation
Since most store-bought steak spice mixes already contain a good amount of salt and pepper, it’s not necessary to add extra salt and pepper to the mayonnaise sauce or to the burger mixture.
